MUSHROOM SPINACH LASAGNA

Lasagna has become a common dish and is mostly served in dinner parties.Everyone really enjoy the cheesy goodness of this dish.Some people enjoy the chicken flavour some love the meaty version.But this recipe is healthy,easy and still delicious.I am sure every vegetarians going to love this.

INGREDIENTS:

  • 2-3 cup blanched spinach
  • 1  mushrooms (chopped)
  • 1 can mushrooms (sliced)
  • 2-3 tablespoon unsalted butter
  • 1 cup cheddar cheese(grated)
  • 3 teaspoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon soya sauce
  • 1 tsp onion powder
  • salt and Pepper to taste
  • Garlic ginger paste
  • 1 table-spoon olive oil
  • 1/4 cup oil
  • 2 tablespoon flour
  • 0.5 liter milk
  • 1/2 tsp oregano
  • 3 large fresh jalapeno sliced
  • 1 tablespoon chicken powder
  • 5 lasagna layers (boiled)

Method:

    1. Grind the blanched spinach till all the leaves are completely chopped and turned into a thick paste
    2. In a non-stick pan,add olive oil and garlic ginger paste.Also add the chopped mushrooms and mix well.
    3. Add salt,pepper,onion powder and soy sauce and cook well till all the flavors have merged.Dish them out and let it cool.

Mushrooms:

  1. sautée the mushrooms in oyster sauce and soya sauce for 1 minute.

White sauce:

  1. In a sauce pan, heat up 1/4 cup oil and add flour.Mix well and add a dash of salt.
  2. Remove the pan from the flame and pour in the milk while whisking it constantly.
  3. Once all the lumps are gone, put it back on the flame,add pepper,chicken powder,oregano and let it thicken slightly.

Arranging the dish:

  1. In an oven safe dish, grease it with a cooking spray.
  2. Add the first layer of spinach and mushrooms, spread it evenly in the base
  3. Put the second i.e lasagne layers.
  4. top the layer with sautéed mushrooms and jalapeno.
  5. Lastly,pour the white sauce on top and bake for 10 minutes at 180ºC,

MINCE FLAT BREAD

INGREDIENTS:

Mince:

  • 1kg beef mince
  • 1 red onion sliced
  • 2-3 chopped tomatoes
  • 1 teaspoon crushed garlic -fresh
  • 1 teaspoon ginger paste
  • 1 teaspoon cumin powder
  • 1/2  teaspoon red chilli flakes
  • 1 teaspoon chicken powder
  • 1 tablespoon soya sauce
  • 1 tablespoon vinegar
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon chilli powder
  • salt and pepper to taste
  • 1/2 cup fresh coriander

Dough:

  • 2-1/2 cups flour
  • 1 tablespoon yeast
  • 1 cup luke warm water
  • 1 teaspoon sugar

METHOD:

Dough :

  1. Start by making the dough first.Mix in the sugar and yeast in warm water and keep it to a side for 5 minutes till bubbles are formed.
  2. Season the flour with salt and slowly pour the yeast mixture kneading it in an open dish.
  3. Once the flour is mixed with the yeast and a ball is formed,knead it for 5 minutes constantly.
  4. Dust a large bowl with flour and place the dough in,cover tight and keep it in a warm place for 3 hours.
  5. Once the dough is risen well,knock out all excess air and knead it on the counter one last time.
  6. divide the dough into 10 equal medium size balls and place in an open flour dusted tray and let it rise again.

Mince:

  1. Get your pan nice and hot,add oil let it heat up, add the mince, and let it loose its water.
  2. once thats done,add a pinch salt, and a glass of water.
  3. Cover the mince and reduce that water down,now its time to cook that mince.
  4. Add onions,garlic,ginger and tomatoes, cook in on a medium flame for 5 minutes.
  5. Add the spices and keep stiring,mix in the sauces and check the flavours.
  6. simmer on a low flame till the mince is completely dry.
  7. Add chopped fresh corriander at the very end,toss and turn.

Assembling and cooking:

you can bake this bread in oven or on the stove which ever you prefer.

oven method:(pre-heat 180 degrees for 20 minutes)

  1. for each bread you have to roll out two doughs into thin flat sphere shape bread.
  2. Place one dough on a greased pan and place a 1 tablespoon mince in the center,use the egg wash on the corners with a pastry brush and the second dough on top
  3. Repeat the same steps for each bread.

Pan method:

  1. grease a nonstick pan with butter
    1. for each bread you have to roll out two doughs into thin flat sphere shape bread.
    2. Place one dough on a greased pan and place a 1 tablespoon mince in the center,use the egg wash on the corners with a pastry brush and the second dough on top.
    3. cook on a low flame for 5 minutes on each side till golden and be patient while flipping dough.

serve hot with a cup of mint chutney or yogurt

FISH TAIL BUN WITH CHICKEN-CHEESE FILLING

 Easy baked buns with rich chicken filling.

INGREDIENTS:

For dough

  • 2 cups flour
  • 2 eggs
  • 2 tablespoon butter
  • 2 tablespoon caster sugar
  • ½ teaspoon salt
  • 2 level teaspoons instant yeast
  • 2 tablespoon milk powder
  • Luke warm water as required to make a soft dough.

For glazing
2 egg Yorks and ½ teaspoon caster sugar.

For filling:

  • 1 kg boneless chicken
  •  2 tablespoon oil
  •  1/3 teaspoon salt
  • 1 tablespoon chili sauce
  •  1 tablespoon soya sauce
  •  2 teaspoon garlic paste
  • ½ cup cheddar cheese
  •  ½ cup mozzarella cheese
  • ½ cup tomato cut into small pieces
  • ½ cup onions
  • ½ cup mushrooms

METHOD:

  1. Add all the ingredients of the dough in a large open bowl and make soft dough by adding little amount of water as required.
    Cover the dough and keep it for rising for 1 hour.

  2. While the dough is in the proving stage. Start by making the filling.
  3. Marinate the chicken with 1/3 teaspoon salt, 1 tablespoon chili sauce, 1 tablespoon soya sauce.
  4. Put 2 tablespoon oil a nonstick pan. Add garlic and stir fry the chicken.
    Stir fry onions and tomatoes.
  5. Now add all the other filling ingredients together. Place this filling in a bowl and keep it aside for use.
  6. Once the dough has risen, divide the dough into three portions. Roll each part out one by one into ½ inch circle and cut the sides of the dough with the parallel lines.
    Put the chicken filling in the center and turn the cut ends on one another forming a fishtail. Once the fishtail is complete press it with the palm.

    Roll out the dough vertically cutting the ends  accoding to picrure and foolding each end across the filling.

Make four fishtail buns in the similar way.
Glaze the buns and place two of them in the oven at a time 150°C for 25 minutes of until the bread turns golden

WHITE SAUCE BAKED SANDWICH

You can make this dish easily if you know the recipe of basic white sauce.Sandwiches come in different forms and its an on the go food.If you're in hurry you can just grab one and eat it all up quickly.

Perfect crisp and cheesy sandwiches will make a perfect tea time snack.

INGREDIENTS :

white sauce :

  •  2 1/2 flour
  •  1/2 teaspoon black pepper

  •  1 teaspoon oregano
  •  1/2 teaspoon chicken powder
  • 2 tablespoon butter
  • 1/2 cup mozzarella cheese
  • 6 mushrooms-sliced
  • 1/4 cup fresh coriander- chopped
  • 3 cups Milk 

Chicken:

  • 4 breast fillets (cut in thin strips)
  •  2 table spoon soya sauce
  •  2 table spoon chili sauce
  •  2 tablespoon lemon juice

METHOD :

  1. Marinate the chicken in soya sauce,chili sauce and lemon.Cover the chicken with cling film and keep it in the refrigerator to marinate for 30 minutes.
  2. In a non-stick sauce pan melt the butter over a low flame.Add the flour and mix it completely well with the butter.
  3. Take the pan off the flame, slowly pour in one cup milk and stir so all the lumps are gone.
  4. Put the sauce pan back on the flame and add the remaining milk.On a slow flame keep stirring the milk until it thickens.Add 1/2 teaspoon salt,oregano,chicken powder,pepper and mix well.
  5. In the very end add the mushrooms,cheese and coriander to the white sauce,give it one nice stir and set it aside!
  6. Remember to always taste the food time to time to check the salt quantity and the flavors.
  7. Fry the chicken separately till its tender and changes it colour.
  8. Add the fried chicken to the white sauce.Let it cool for a bit and then apply the sauce with chicken on the bread and bake in over for 15 minutes at 100 degrees.
