DINNER UNDER 30!

Forgot to make dinner or have friends coming over,this recipe is guaranteed to satisfy your carb cravings.
Ready in just under 30 minutes this dish will keep your guests wanting more.
It’s a complete wholesome meal!

you’ll need:

⦁ chicken 400 gms
⦁ Spagetti 1 pack
⦁ 2 capcicum
⦁ 1 onion
⦁ 3 cloves of garlic
⦁ 1 table spoon butter
⦁ 1 teaspoon oregano
⦁ 1/2 teaspoon red chili flakes
⦁ 1/4 cup milk
⦁ salt and pepper to taste
⦁ 1 cup mozzarella cheese
⦁ 1 cup thinly sliced cabbage
⦁ 1/2 cup chopped pickled red peppers
⦁ 1/2 cup mushrooms sliced
⦁ 1 teaspoon onion powder
⦁ 1/2 cup of tomatoe paste
⦁ 1/2 cup chicken stock
⦁ 1 table spoon cream
⦁ juice of one large lemon or according to taste

Method:

1. Boil the spagetti in salt water to the point that you can just bite into it (Al’dante),rememer to not over cook it.Keep an eye on it! Once done, drain coat with olive oil and keep aside to cool.
2. In a large skillet, melt the butter,add garlic till the smell of garlic is infused in the butter.
3. Add the tomatoe paste and keep cooking the paste for 5 minutes slowly it will become thick so add chicken stock a little at a time.
4. The paste should’nt be water,add the chicken and cook till it changes colour.
5. Once the chicken is white and cooked through add the veggies and cook well for about two minutes.
6. Add the spagetti at this poin and alittle butter and coat it well enough..it will be a bit sticky.Now add all the spices ,lemon juice and vinegar,mix and cook again for 1 min and add milk little at a time to loosen it a bit.
7. in the end add 2 tablespoon of light cream just to balance the spice.
8. In a baking dish add the noodles,coat it with cheese,sprinkle oregano and red chili flakes and bake in a preheat oven at 180degress for 2 minutes or until the cheese is melted.
note: you dont want the cheese to get golden just want it to melt

Chicken wraps under 250 calories.

 

These chicken wraps are so quick and easy to make that youre going to absolutely love them
They are super healthy and you can make a big batch for a week.
A grab and go kinda meal.

Recipe yields 7 servings

INGREDIENTS :

  • Chicken breast fillet  400 grams
  • Onion-1 large sliced
  • Capsicum -1 large sliced
  • Tomatoes- 1 large small slices
  • Cabbage-0.5 head sliced thinly
  • Mustard
  • Mushrooms -half cup stems and pieces sliced
  • 7 Whole wheat tortillas
  • Taco seasoning-2 table spoons

Method:

  1. Marinate the chicken in the taco seasoning for 30 minutes and bake it for 15 minutes at 180°C. Once baked keep aside for 5 minutes and then slice.
    (If you slice immediately all the juices will run out, resting is important so the juices redistribute).
  2. Heat the tortillas in the microwave for 30 seconds each side.
  3. Once your meat, veggies and tortillas are ready.Its time to assemble!
  4. On a sheet of foil,lay your tortilla flat,put the cabbage horizontally in the center,top it with generous amount of cabbage,tomatoes onion and mushrooms.
  5. Add the 4 to 5 slices of chicken on top, don’t overfill the wrap.
  6. Drizzle a small stream of mustard on top,and roll it in tight.
  7. Wrap the foil on top.

    You can add iceberg lettuce that gives it a much better crunchy fresh flavour and texture.I didn’t have them at hand so  I switched to cabbage.

    HACK : to prevent the wrap from opening ,put heavy bottom pan on it so it adds pressure on it.This will make sure the wraps hold its shape and don’t open up.

NUTTELLA GANACHE BREAD

INGREDIENTS :

  • Nuttella 250gms
  • Heavy cream 250gms
  • Dark chocolate chips 150gms
  • 2 tablespoon milk
  • 2 cup flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1.5 tablespoon yeast
  • 1 cup warm water
  • 1 t milk powder
  • 1 egg for egg wash
  • poppy seeds,sesame seeds for garnish.

METHOD:

  1. Heat the cream, add the chocolate chips and stir and combine well till the chocolate chips have melted well and add nuttella along with slight milk and mix well till combined.
  2. Set the ganache in the fridge till it firms up.
    While the chocolate holds itself in a large open bowl or a stand mixer add the dry ingredients (flour,salt,sugar,dry milk powder and yeast).
  3. Start the mixer on low speed,till everything is well combined. And slowly add the warm water till the dough comes together.
  4. Knead the dough together for 5 minutes,keep it in a bowl covered in a warm place for an hour.
    Once the dough has doubled in size, pre-heat the oven at 180°C for 15 minutes.
    Knead the dough again for 5 minutes.
  5. Make hollow circle and add a teaspoon or less of ganache inside it. Then bring the dough on top and pinch it tight so it is sealed properly.
    Lay a cookie sheet with wax paper and put all the bread-balls an inch apart from each other.
  6. Brush them with egg wash and top with sesame seeds,poppy seeds or hazelnuts.
    Bake at 140°C for 15 minutes.

My take on bibimbap

Bibimbap itaa very popular Korean dish which simply means mixed rice, so it’s totally personal prefrence what you want to add or remove. It’s a rice bowl with a variety of toppings.

Here is my take on the dish.Disclaimer this is not the classic recipe just my way of making it.

INGREDIENTS:

  • 1 large thinly sliced carrot
  • 1/2 head of thinly sliced cabbage
  • 1/2 kilo thinly sliced cabbage
  • 1/2 cup sliced shittake mushrooms
  • 1/2 cup bean sprouts
  • 1/2 cup boiled spinach
  • 1 egg(crispy fried egg with runny yolk)
  • 1 cup boiled sticky rice (preferably left over rice)
  • Salt 
  • 1 teaspoon Chinesefive spice
  • pepper
  • 1-2tablespoon sesame oil
  • Spring onions 

For sauce:

  • 1/4 cup sambal olek 
  • 1/4 cup tablespoon hoison sauce
  • 1/4 cup Apple cider vinegar
  • 1/4 soy sauce reduced sodium


METHOD:

  1. Once you have all the ingredients ready all you need to do is really cook every component separately one by one.
  2. Starting with the carrots sautee then and add a little salt. Make sure you don’t over cook them you still want some crunch to it.
  3. Do the same to the cabbage and mushrooms.
  4. Cook the spinach and add seasoning to it. Keep all the veggies separately and do no mix it .
  5. Cook the chicken well,add chinese five spice ,salt,pepper,garlic and make sure it has some colour to it.
  6. In a large open wok take the sesame oil and fry the rice for about a minute to give it a crisp edge.Tossing and turning quickly

For the sauce:

  1. Simply are all sauce to a frying pan and let it simmer till reduced.

Assembling:

In a wide bowl add the rice to the base and top it with half of the sauce.Now,add chicken to one side, assorted veggies to the other,bean sprots to the other while the top is covered.

Now add the rest of the sauce and top with a fried egg and a wedge of a lemon.

-I kept the rice separate as my yongest sister likes her rice separate,also we don’t like half cooked eggs so I cooked mine completely.

BABAGANOUSH

Babaganoush is a Lebanese classic dish.It’s alot like hummus but has more texture to it,unlike hummus which is more paste-like. It’s my favourite snack currently and I can’t stop myself finishing it all.It’s very easy and very healthy.

Ingredients :

  • One large eggplant 
  • 1 tablespoon Garlic- crushed
  • 1/4 cup tahini
  • 1 tablespoon olive oil
  • Salt and pepper
  • Juice of one lime
  • pinch of Cayeene pepper 
  • Sesame seeds for garnish

Method:

  1. In an oven roast the eggplant for 20 minutes at 200°C (400°F).
  2. Once it’s nice and soft, take the eggplant out and keep it in a plastic bag and let it sit for another 15minutes.
  3. After 15minutes, simply peel the skin off the eggplant and discard the skin.
  4. Take the eggplant in a bowl and add tahini crushed garlic lemon juice and salt-pepper and mash it with the pestle or a fork. 
  5. Once your egg plant has some texture to it-time to plate it. Add it on the plate and swirl it from the centre and make a narrow space or simply add it to a small bowl.
  6. Add olive oil and and garnish with cayenne and sesame seeds or even parsley.

Serve it with toasted pita, breadsticks or crisps.

MY FAVOURITE YOUTUBE CHANNELS… WHY?

It’s a fact that no one is born with brilliant cooking skills. We’ve all picked up skills from someone or the other, mother,grandmother,TV-channels,books and the very popular YouTube.The phrase self-taught is just an easy way of saying you didn’t get professional training but learnt from various other places.
For me YouTube is a get away from all worries of life and I  will be honest I learnt a lot from it.The reason why I am writing this blog-post is because many people I know don’t know cooking if they don’t have a written recipe in front of them.In my opinion if you follow a recipe to every gram it has to be perfect,why else would someone share it if there were flaws.

These are the YouTube channels I visit regularly and I will explain exactly why I love these channels so much and will also post their links below.

My top 6 favorites are as follows:

  1. Gordon Ramsay:

    Everyone knows Gordon Ramsay unless they’ve been living in a cave or don’t watch television.The man needs no explanation,He is an exceptional chef and owns a chain of Michelin star restaurants around the world.There is possibly nothing he does not know when it comes to food.He is a food critic ,judge of the masterchef USA,perfectionist in his restaurants and a celebrated chef of many amazing cook books.
    There is a channel by his name,I am not very sure if he runs it or his team but it has a series of videos showing different recipes,videos and shows of Gordon.
    There is a whole playlist of ultimate home cooking and the 100 cookery courses which I liked so much that my friend gifted me a book with all those recipes.I have been following this channel for over three years now and I absolutely love it.These recipes could be used for family feasts,occasions and Christmas etc.

  2. FlavCity:

    Flavcity is owned by a very talented american home cook Bobby Parrish.He makes mouth-watering foods and provides easy recipes.He is also member of the Tastemade family.
    I actually didn’t know he had a YouTube channel and randomly followed him on snapchat and would see his snaps and really try to recreate it at home as snapchat has small videos.But later I heard him talk about his channel and I was amazed to see the recipes on his website and YouTube are terrific and the good thing about all his recipes is that all the ingredients are easily available in your pantry.
    I have followed almost all his fried rice and chicken recipes.

    You’ll find a variety of interesting foods in his channel so subscribe and try out some and let me know which ones you liked the best so I can try some aswell.

    This is guy is probably the cutest guy on the YouTube and if you see his channel profile picture you might think he is too young to know how to cook amazing food but you’d think wrong.

    This Irish guy is so brilliant at what he does that he cooks for Tastemade. I have followed a few recipes and they are just perfect.Even if you don’t like cooking just subscribe to his channel and you’ll always be tempted after you see food pictures.

    He has a variety of recipes, from baking cakes to cooking chicken,breads,burgers sandwiches and healthy snack recipes.I really enjoy watching his videos.He uploads new videos every week. Donal skehan has also been featured on other food channels.donal skehan

    Get Curried is a first of its kind Indian online cooking channel,which has many different recipes from south Asia,English,breakfast,baking,Italian,french and Of course their own recipes.As you all know I belong to Pakistan,I love my curries,pulaos and biryanis and this is probably the only channel that shows Indian cookery in a very simplified form.There are many home cooks that show their expertise so there is not one person teaching but you get the opportunity to learn from different people,the different styles of cooking.Usually it gets too monotonous when you watch videos of the same people teaching,so this is a nice way to enjoy and learn.

    I know that I run a blog with recipes that has oodles of cheese butter and sugar but very few people know I run a business service  that provides healthy meal to your doorstep.Beer Biceps has lately become my most visited channel and I see the videos sometimes twice and thrice a day.Its a health and fitness channel owned by an Indian name Ranveer.

    The surprising thing about it is that you’re not only informed about what is right for you,but also given a clear vision about what to eat,how to eat and also the brilliant recipes. Ranveer has a whole playlist of high protein low carb recipes-both vegan and non-veg.

    I am a Pakistani and one of the reason why I really enjoy his recipes are because of the similarity in our culture.Our foods are rich,flavorsome and sometimes to get the maximum flavour out of the spices,us desi peeps add a lot of oil which makes healthy eating tad-bit difficult.I would really appreciate if all of you go and subscribe to his channel and follow his recipes.You can cook it for your family and friends,this way everyone can join in your fitness journey without depriving themselves of delicious foods.

    Food with Chetna is owned by an Indian currently living in the UK.She is very passionate about food and that shows in all her videos.I recently came across her channel after she was featured in one of Jamie oliver’s videos and ever since then I keep myself updated with all her recipes and website.

    I do so because mostly the foods she makes are super easy and mostly something my family would really enjoy.As I mentioned earlier we have similar culture and love our desi foods so i regularly check out her channel.

    She not only makes Indian foods but has many different baking recipes that are simplified and the basics are explained in a simpler way.

Crepes

INGREDIENTS:

  • 2 cups whole milk
  • 1 and 1/4 cup all purpose flour
  • 1.5 teaspoon Baking powder
  • 1 tsp vanilla extract
  • 4 whole eggs
  • 1 tsp salt
  • 1 cup caster sugar
  • Quarter cup soften butter

nutella filling with cheeries,whipped cream and chocolate and caramel sauce,dusting of icing sugar

METHOD :

  1. In a large bowl beat all the eggs and sugar till nice pale.
  2. Add the milk and keep mixing it with an electric beater and add vanilla extract to it.
  3. Now add all the dry ingredients (i.e Flour,salt,baking powder ) and sieve it so there are no lumps in the mixture.
  4. Fold in all the batter,make sure there are no lumps and its a nice thin consistency
  5. Preheat a non-stick skillet,add a small nob of butter and swirl it around coating the entire pan(skillet).
  6. With the help of a spoon ladle pour in the batter and quickly swirl it around making a sheet.
  7. Once tiny bubbles appear flip it to the other side and cook for another minute till slightly golden.
  8. Repeat for the rest of the crepes

*You can serve these crepes with clotted cream,whipped cream,nutella,agave syrup,maple syrup or caramel sauce or chocolate sauce.And decorate it with sliced fruits like strawberries,cherries,bananas and raspberries.
